Healthy pickled beets recipe

Ingredients:

  • 8 medium fresh beets
  • 1 cup vinegar (preferably apple cider vinegar for a mellow flavor)
  • 1/2 cup granulated sugar
  • 1-1/2 teaspoons whole cloves
  • 1-1/2 teaspoons whole allspice
  • 1/2 teaspoon salt

Directions:

  1. Start by thoroughly scrubbing the beets and trimming the tops to about 1 inch.
  2. Place the beets in a Dutch oven and add enough water to cover them. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low and let the beets simmer, covered, for about 25-30 minutes, or until they are tender when pierced with a fork.
  4. Once cooked, remove the beets from the water and allow them to cool. Once cooled, peel the beets and slice them. Transfer the sliced beets to a large bowl and set aside.
  5. In a small saucepan, combine the vinegar, sugar, cloves, allspice, and salt. Bring the mixture to a boil over medium heat, stirring occasionally. Let it boil for about 5 minutes to allow the flavors to meld together.
  6. Carefully pour the hot vinegar mixture over the sliced beets in the bowl, ensuring all the beets are evenly coated.
  7. Cover the bowl and refrigerate the pickled beets for at least 1 hour to allow the flavors to develop.
  8. Before serving, drain the pickling liquid from the beets.
